MOSCATO DI PANTELLERIA DOC

The grapes harvested in the first ten days of August are laid out in the sun to dry for two to three weeks and then macerate with the fermenting must, in order to promote the release of aromas and sugars.

PRODUCTION AREA: Island of Pantelleria.
VINE: Zibibbo.
SOIL: Volcanic-Sandy.
ALTITUDE: From 100 to 300 meters above sea level.
VINEYARDS: Vineyards bred to low tree to protect it from the winds.
PRUNING: Short spur pruning.
HARVEST: Manual, from the beginning of August for the drying of the grapes and from the beginning of September for the vinification.
VINIFICATION: Destemming and crushing with subsequent maceration of the dried grapes in fermentation.
AGING: In steel tanks and then in bottle.
TASTING:
Color: Golden yellow.
Bouquet: Delicate and fragrant of Muscat.
Taste: Sweet, balanced and characteristic.
SERVING TEMPERATURE: 10°-12° C.
SERVING SUGGESTIONS: Excellent as an aperitif accompanied by semi-mature cheeses, for dessert with ricotta cheese desserts, cannoli, Sicilian cassata.
